Super delicious and super fun to serve too! We make our tortilla soup recipe with our little Pardina lentils. Our little lentils are complete “show stoppers” in every way! The reality of our tortilla soup is this; vegan, Gluten-free, Soy-free, Nut-free, an “out of this world” kind of recipe!

Ingredients

¾ cup brown lentils, prepared
1 tsp. extra-virgin olive oil
1 medium red onion, chopped
4 garlic cloves, minced
1 jalapeno, minced
½ cup green bell pepper, chopped
½ cup red bell pepper, chopped
½ tsp. cumin
¼ tsp. oregano
¼ tsp. thyme
½ tsp. paprika
¼ tsp. ground cayenne pepper
½ tsp. garlic powder
2 cups vegetable broth
1 15 oz. can low-sodium black beans
2 large tomatoes, finely chopped
1 6 oz. can tomato paste
½ tsp. kosher salt
tortilla strips
