Delicious vegan garbanzo bean stew with a stout beer broth.


4 cups prepared garbanzo beans
4 tbsp. extra-virgin olive oil
3 medium leeks, thinly sliced
1 cup parsnips, sliced
1 cup carrots, sliced
1 cup red potatoes, cut into chunks
1 cup turnips, peeled and cut into chunks
1 cup celery, sliced
4 cups vegetable stock, low sodium
2 cups stout beer (use Samuel Smith’s or another brew that is vegan)
¼ tsp. dried rosemary,
¼ tsp. dried thyme
¼ tsp. dried marjoram
½ cup fresh parsley, chopped
Salt & pepper to taste
