Green split pea, asparagus and garbanzo bean salad with lemon vinaigrette.

Ingredients

¾ cup prepared garbanzo beans
½ cup prepared green split peas
1 tbsp. extra-virgin olive oil
1 medium leek, sliced into rounds
2 garlic cloves, minced
1 bunch of asparagus, ends off and cut into 1” lengths
¾ cup dried cranberries
1 cup fresh parsley, chopped
2-3 tbsp. extra virgin olive oil
3 tbsp. fresh squeezed lemon juice
½ tbsp. pure maple syrup
¼ tsp. fine grain sea salt and lots of pepper to taste
