This terrific green split pea dahl is quite versatile as it can be a side dish or a main dish depending on what works best for you.

Ingredients

1 cup green split pea
2 cups vegetable stock, low sodium
5 cups medium chopped bok choy
¼ cup cilantro, chopped
1 medium onion, sliced thinly
1 small can water chestnuts, sliced
1 tbsp. grated fresh ginger
5 cloves garlic, minced
½ tsp. turmeric
2 green chilies, minced
1 tsp. fresh ground black pepper
1 tsp. mustard seeds
2 tbsp. extra-virgin olive oil
