Here’s a delicious and moist applesauce cake recipe. This cake is very easy to make, it’s also dairy-free and gluten-free. It’s very soft and light – it’s almost like a souffle cake.


4 eggs

¾ cup applesauce

2 tablespoons jam

1 tablespoon cashew butter

¼ cup coconut flour

½ cup desiccated coconut

A pinch of baking soda

Cinnamon to taste


Preheat your oven to 180°C (350°F).

Separate the egg whites from the egg yolks.

Whisk the egg yolks, then add the applesauce, jam, cinnamon, and cashew butter. Mix everything thoroughly.

Add coconut flour and a pinch of baking soda. After you mix everything together, add the desiccated coconut and mix once again until everything is well incorporated.

Whisk the egg whites with a hand mixer, then add a little bit of the egg white foam to the other mixture and fold together. Then, add this mixture to the rest of the egg whites and fold everything carefully using a wooden or silicone spatula.

Bake for about 18 minutes or until the cake is golden brown and a toothpick comes out clean.

Let the cake cool down completely before cutting.

Optionally, decorate with coconut whipped cream and pecans.
